Ingredients:
• 3 tablespoons chia seeds
• 1 tablespoon maple syrup or organic honey (or sweetener of choice)
• 1 teaspoon vanilla extract
• 1 mango, chopped
• 3⁄4 cup Coconut Milk
Steps:
1. Mix the chia seeds and milk together in a bowl. Leave on the counter at room temperature to thicken, about 15 minutes.
2. Once thick, stir together again and add a splash of extra milk, if needed.
3. Add your flavors (cinnamon/vanilla extract/etc) and sweetener of choice and mix well.
4. Layer in a glass jar or bowl – alternating between the chia pudding mixture, nuts, fruits and top with your garnishing.
5. Refrigerate and serve cold.
6. Tips: Taste best when refrigerated overnight.
